Kielbasa Soup
 Ingredients

  1 medium onion(s)   
  1 medium green pepper(s)   
  1 stalk(s) celery (medium)   
4 clove(s) garlic clove(s) (medium)   
  2 cup(s) reduced-sodium chicken broth   
  1 cup(s) canned black beans   
  1 cup(s) stewed tomatoes   
  1 small zucchini   
  1 cup(s) carrot(s)   
1 Tbsp dried parsley   
1/4 tsp red pepper flakes   
1 tsp black pepper   
1/2 pound(s) kielbasa   
1 Tbsp store-bought horseradish   
1 Tbsp soy sauce   
  1 Tbsp Beef bouillon, canned   

Instructions


in a non stick skillet cook meat over medium heat until lightly browned. add onion, garlic and green pepper. Cook and stir for 5 minutes or until vegetables are tender. Transfer to a slow cooker. Stir in the remaining ingredients. Cover and cook for 8-9 hours makes 5 servings

Potato Soup

Ingredients


  1 cup(s) onion(s)   
1 Tbsp italian seasoning   
1 Tbsp garlic powder   
3 tsp table salt   
3 tsp black pepper   
1 serving(s) Oscar Mayer Fully Cooked Bacon-4 slices   
1 cup(s) light sour cream   
  8 small uncooked red potatoes   
  4 cup(s) vegetable broth   

Instructions

reserve the sour cream, and margarine
dice the potato and bacon, add all ingredients into pot. Bring to a boil then reduce to simmer and let simmer for 10 minutes or until potatos are cooked. Take off heat and let sit for 10 minutes. With a potato masher, mash the soup just a little. Then add sour cream and margarine and mix well. Serve. Makes 4 servings

Ingredients


  3 cup(s) broccoli   
  1 1/2 cup(s) onion(s)   
  2 cup(s) asparagus   
  2 cup(s) canned tomatoes   
2 leaf/leaves bay leaf   
2 Tbsp italian seasoning   
1 Tbsp horseradish
  1 small poblano chile   
  2 cup(s) cauliflower   
2 clove(s) garlic clove(s), minced (medium)   
  1 cup(s) carrot(s)   
  2 cup(s) fat-free beef broth   
1 envelope(s) onion soup, dry mix   

Instructions

Chop veggies and put all ingredients into a soup pot. Simmer on low heat for 2 hours.

Ham and bean soup

Ingredients


  32 oz fat-free chicken broth   
  29 oz canned diced tomatoes   
  8 oz canned green chili peppers   
  15 oz canned black beans   
  12 oz Hormel Pillow Pack Diced ham   
4 cup(s) water   
2 Tbsp minced garlic   
1 Tbsp italian seasoning   
1 Tbsp Kraft Prepared Horseradish   
  2 cup(s) spinach, chopped   

Instructions

put all ingredients into a crock pot and cook 6 hours

Ground Turkey Soup

Ingredients


  2 cup(s) uncooked potato(es)   
  1/2 cup(s) onion(s)   
2 Tbsp dried parsley   
1 leaf/leaves bay leaf   
1 Tbsp garlic powder   
2 tsp black pepper   
3 Tbsp cornstarch   
  1 cup(s) carrot(s)   
1 tsp ground oregano   
5 cup(s) water   
1 pound(s) Turkey, ground, regular, raw   
3 tsp table salt   
2 Tbsp chicken gravy, dry mix, 1 packet   
  3 cup(s) fat-free chicken broth   

Instructions


Brown Ground turkey in fry pay. Drain and rinse.
Add Ground turkey to pot or slow cooker.
Add all other ingredients except corn starch.
Cook on low heat approx 2 hours or in slow cooker on low for several hours until potatoes and carrots are cooked.
With soup at a boil. Mix Corn Starch with 1/4 cup of cold water, adding to soup slowly, stirring well.
Soup will thicken more when removed from heat.
Serve
2Cups = 1 serving

Quick Taco Soup


this is a great soup to make with leftover chicken or those quarter bags of frozen veggies that build up in the freezer. We serve with with tortilla chips on the side an a bit of sour cream.

Ingredients


    * *Tomatoes, red, ripe, canned, with green chilies, 2 cup * *Lawry's Taco Seasoning, one pkg * Carrots, raw, 1 cup sliced * Green Beans (snap), 1 cup * Water, tap, 5 cup (8 fl oz) * White Rice, long grain, .25 cup * Chicken Thigh, 2 thigh, bone and skin removed Makes 5- 1.5 cup servings.

Directions

cube the chicken and brown it in the bottom of your soup pot. Add 5 cups of water, taco seasoning, two cans of diced tomato with green chili. Add in rice and bring to a boil. Once it boils set to simmer and add in the veggies (i use fresh but frozen works). Simmer until rice is cooked and serve.

Easy Pot Sticker and Mussels Soup


Ingredients


    Onions, raw, 1 cup, chopped Red Ripe Tomatoes, 1 cup, chopped or sliced Cilantro, raw, 5 tbsp Jalapeno Peppers, .5 cup, sliced Lemon Juice, .15 cup Mussels, 1lb frozen in shell Chinese, Pork Pot Sticker, 10-12 pot stickers (about 4 servings worth) Tomato Paste, 0.5 cup Garlic, 2 cloves minced Vegetable Broth, 4 cup Water 1.5 cup Kikkoman Lite Soy Sauce, 2 tbsp

Directions

1. With the onion, cilantro,. Jalapeno, lemon and Tomato you are going to make a home made Pico De Gallo. Chop all of the above items and toss them together. (Most veggie sections of the super market sell fresh pre-made pico de Gallo, you can use that instead.)
2. in a large pot bring the vegetable broth, water, minced garlic, tomato paste and soy sauce to a simmer.
3. Add the Pico De Gallo mixture and simmer for about 5 minutes.
4. Add the frozen pot stickers and mussels and simmer for another 10 minutes.
Serve with crusty bread for dipping (not included in nutritional info). Makes about 8 cups
