 Chili Chocolate Tofu Pudding

Ingredients


1/4 cup(s) sugar   
6 packet(s) Sweet 'N Low Granulated Sugar Substitute   
2 tsp vanilla extract   
5 tsp CHATFIELD'S Cocoa powder   
1 Tbsp water   
  1/2 tsp chopped red hot chili peppers   
  14 oz low-fat tofu   

Instructions

put it all in the blender and blend on high. Makes 6- 2.5oz servings.

Shortbread Cookie Recipe

3/4 cup flour, sifted
1/4 cup superfine sugar
Pinch of salt
1/2 cup room temperature Land 'O Lakes unsalted butter
Preheat your oven to 350 degrees F.
Combine the flour, sugar and salt in a mixing bowl. Work in the butter with a fork or pastry cutter until the dough has the consistency of short crust.
Pulsing in a food processor will work also.
Sprinkle a board or your counter top lightly with flour. Turn the dough onto the board and knead until it's smooth. Refrigerate the dough for a couple of hours or overnight.
You should have approximately 8 ounces of dough. Divide the dough into four equal portions for large cookies or eight equal portions for small cookies and shape into rounds.
For consistency you might want to pull out your kitchen scales.
Place each round on a parchment paper lined baking sheet and flatten them with the bottom of a glass to about 1/4 inch thickness. Prick with a fork. Bake at 350 degrees F. for 20 to 30 minutes, until the cookies begin to brown slightly. Allow the cookies to cool on the baking sheet.

Peppermint patty cookies

Ingredients

  • 2/3 cup butter or margarine, softened
  • 1 cup sugar
  • 1 egg
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1/3 cup HERSHEY'S Cocoa
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 24 to 26 small (1-1/2 inch) YORK Peppermint Patties
  • White decorator's sugar

Directions

  1. 1. Beat butter and sugar in large mixing bowl; add egg, milk and vanilla, blending thoroughly. Stir together flour, cocoa, baking soda and salt. Add to butter mixture, blending well. Refrigerate dough about 1 hour or until firm enough to handle. (Dough will be a little soft.)
  2. 2. Heat oven to 350°F. Lightly grease cookie sheet or line with parchment paper. Remove wrappers from peppermint patties.
  3. 3. Roll dough into 1-1/4 inch balls. For each cookie flatten ball slightly; press peppermint pattie into dough. Mold dough around pattie so that it is completely covered. Place on prepared cookie sheet. Using knife edge press star design into surface of each cookie; sprinkle with decorator's sugar.
  4. 4. Bake 12 to 14 minutes or until cookie is set; sprinkle with additional sugar, if desired. Cool slightly; remove from cookie sheet to wire rack. Cool completely. About 2 dozen cookies.

Candied Grapefruit Peel
6 small grapefruit   
2.5 cups of sugar

Instructions

quarter the grapefruit, remove the meat and slice the peal into 1/4 inch strips. makes about 60 strips
put strips in water to cover and bring to a boil. BOIL 15 MINUTES then drain, and repeat 3 times. After the 4th time put the peels back in the pot add water to cover by 1" and add in sugar. bring to a boil then reduce heat to simmer for 2 hours.
Drain the peals and put on a rack to drain excess. melt the chocolate then dip each piece in chocolate and let dry on wax paper. refrigerate final product

if you do not use the chocolate you can put the candied peel into the food dehydrator for 8 hours. Then placed it into a sealed jar. It lasts for months this way.
